This pasta chip and whipped feta dip is the dish you didn’t know you needed

If you’ve spent any time on TikTok, you’ve probably seen TikTokers raving about whipped feta and pasta chips. The delicious dishes are among the most popular viral recipes on the platform, and now vegans can enjoy them too! On this episode of In The Know: Kitchen Etc, join vegan cookbook author Carleigh Bodrug (@plantyou) as she shares her irresistible vegan takes on pasta chips and whipped feta!

Ingredients

Vegan Pasta Chips

  • 3 cups cooked farfalle pasta

  • 1 tbsp extra virgin olive oil

  • 1 tbsp oregano

  • ½ tsp garlic powder

  • ¼ tsp sea salt

  • ¼ tsp paprika

Vegan Whipped Feta

  • 1 ½ cups cherry tomatoes

  • 2 tbsp olive oil

  • ½ tsp sea salt

  • 1 cup cashews

  • 1 cup white beans

  • 4 garlic cloves

  • 1 tbsp nutritional yeast

  • ½ lemon, juiced

  • ¼ tsp garlic powder

  • 1 tbsp dried parsley

  • 3 tbsp water

  • ½ tsp sea salt

Instructions

Vegan Pasta Chips

  1. Place cooked farfalle pasta in a bowl and toss it with olive oil, using a spatula to make sure the pasta is fully coated.

  2. Add the garlic powder, oregano, sea salt, and paprika to the pasta, tossing it to coat.

  3. Cook the pasta in an air fryer for 5 minutes at 400 degrees Fahrenheit.

  4. Toss the pasta and continue to air fry for another 5 minutes.

  5. Remove the pasta from the air fryer and plate.

Vegan Whipped Feta

  1. Cut cherry tomatoes in half and place them in a bowl.

  2. Toss the cherry tomatoes with olive oil and sea salt.

  3. Place the tomatoes on a baking sheet and roast them for 20 minutes at 400 degrees Fahrenheit until they burst.

  4. Soak the cashews in warm water for 1 hour or boil them for 5 minutes until they soften.

  5. Add the cashews to a food processor, along with the white beans, garlic, nutritional yeast, lemon juice, garlic powder, dried parsley, water, and sea salt.

  6. Blend the ingredients on a high speed setting until they are smooth and creamy, pausing occasionally to scrape the sides of the food processor.

  7. Pour the mixture into a serving bowl, then use a spoon to create a hollow in the center of the mixture.

  8. Add the roasted tomatoes to the hollow.

  9. Garnish the whipped feta with fresh parsley and drizzle it with olive oil.

  10. Serve the whipped feta with the pasta chips, and enjoy!
