Every BBQ needs a satisfying side dish, and this orzo pasta salad with vegetables is the perfect choice! This surefire crowd-pleaser features a menagerie of fresh vegetables and orzo pasta mixed with a flavorful vinaigrette dressing. Not only is this orzo pasta salad delicious, but it’s also super easy to throw together. If you’re looking for a tasty side dish to add to your party’s spread, try this orzo and vegetable pasta salad!

Ingredients

Salad Dressing

  • ¼ cup red wine vinegar

  • 1 tsp dijon mustard

  • 2 tsp oregano

  • 1 tsp salt

  • ½ tsp black pepper

Pasta Salad

  • ⅓ cup red onion, diced

  • 15 oz. can chickpeas

  • ⅓ cup kalamata olives, sliced

  • 1 pint cherry tomatoes, halved

  • ⅓ cups cooked orzo pasta

  • ½ cup fresh parsley, finely chopped

  • 8 oz. feta cheese

Directions

  1. Make the dressing by whisking together red wine vinegar, lemon juice, dijon mustard, garlic, dried oregano, salt, and black pepper. Drizzle in olive oil while whisking the mixture to emulsify.

  1. Add diced red onions and half of the vinaigrette dressing to a large bowl.

  1. Add chopped bell peppers along with chickpeas, kalamata olives, cucumbers, and cherry tomatoes to the bowl with the dressing and red onions.

  1. Toss together with tongs, then add the mixture to a bowl of cooked orzo pasta.

  1. Add the remaining dressing, followed by oregano, and mix with the tongs.

  1. Add parsley and feta cheese, then mix using the tongs.

  2. Garnish with mint and an avocado “flower” before serving.
