This pizza toast with a vegan twist is a must if you’re in the mood for something quick and tasty
No food conjures the nostalgia of youth quite like pizza bagels. Even Hailey Bieber knows that! The celebrity model recently shared her recipe for pizza toast—a more grownup version of the pizza bagel. Of course, vegan chef Carleigh Bodrug (@plantyou) had to put a plant-based spin on the viral recipe. On this episode of In The Know: Kitchen Etc, join Bodrug as she shares her vegan pizza toast recipe, complete with homemade vegan cashew cheese and cherry tomato sauce.
Ingredients
Cherry Tomato Sauce
1 lb cherry tomatoes
¼ cup extra virgin olive oil
2 tbsp oregano
Salt
Pepper
3 whole garlic cloves
Vegan Cashew Cheese
¼ cup cashews
¼ cup coconut yogurt
1 clove garlic
3 tbsp warm water
½ tsp salt
Heirloom Tomato Topping
1 heirloom tomato, sliced
Juice of ½ lemon
1 tbsp extra virgin olive oil
Extra virgin olive oil
Salt
Pepper
Pizza Toast
6 slices of white bread
Vegan butter
Extra virgin olive oil
½ cup of fresh basil
Instructions
Cherry Tomato Sauce
Add your tomatoes to a parchment-lined baking sheet, and drizzle with a generous amount (about ¼ cup) of extra virgin olive oil. Sprinkle with oregano, salt and pepper, and place 3 whole garlic cloves on the baking sheet as well. Pop it in the oven for 40 minutes at 400 degrees Fahrenheit.
Remove from the oven and blend.
Vegan Cashew Cheese
Blend together the cashews, coconut yogurt, garlic, warm water, and salt until the mixture reaches a thick, “melty” consistency.
Heirloom Tomato Topping
Fan your heirloom tomato slices out on a plate, and add your lemon juice and extra virgin olive oil to them. Sprinkle with salt and pepper and let the slices marinate for 5-10 minutes.
Pizza Toast
Spread vegan butter on one side of each slice of bread, and toast them in a pan on medium heat until each side is brown and crispy.
Place your toasted bread on a parchment-lined baking sheet.
Layer on your homemade cherry tomato sauce, followed by the vegan cashew cheese, and the marinated heirloom tomatoes. Go ahead and add a little more cheese and sauce on top of the tomatoes, and finish off with a drizzle of extra virgin olive oil and roast them in the oven for 6 minutes at 400 degrees Fahrenheit.
Once out of the oven, add some shreds of fresh basil, and dig in!
