Sneak veggies into breakfast with these colorful spinach pancakes

Sneak green veggies into your kid’s diet with these flourless spinach pancakes. Even picky eaters won’t know what hit them.

The American Academy of Pediatrics recommends children eat vegetables with every meal and snack. This is a great way to make sure they’re getting enough greens without compromising flavors kids love. Although packed with veggies, these pancakes are still on the sweeter side. Plus, their vibrant green hue will get your little one excited to eat breakfast.

Ingredients

  • 1 cup old-fashioned oats

  • 1 cup spinach

  • 1/2 cup milk

  • 2 Tablespoon coconut oil

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder

  • 1 egg

  • 1 ripe banana

  • Blueberries

  • Raspberries

  • Maple syrup

  • Pinch of salt

1. Place the oats into a blender. Blend until it’s finely milled like the consistency of flour.

2.Add the spinach, banana, egg, milk, cinnamon and vanilla extract into the blender with the oat flour. Then blend until smooth.

3. Add a pinch of salt and the baking soda and blend one more time.

4. Pour the pancake batter into a nonstick pan or skillet over medium heat. Be sure to cook for two to three minutes on both sides.

5. Plate your spinach pancakes. Top with maple syrup and berries. Then dig in!
