They’re easy to use and ensure foods are cooked to your preferred level of doneness. 1. Sous vide 24-hour oxtails

For tender meat that falls off the bone, try this sous vide 24-hour oxtail recipe. Start by searing oxtails in a pan, seasoning them with nutmeg, sage, rosemary, bay leaves and minced garlic. Next, stir a bit of tomato paste into the pan and transfer all of the ingredients to a sous vide bag. Use your sous vide to cook the oxtails for 24 hours. The finished oxtails can be eaten on their own or used to make a pasta sauce!

2. Sous vide lobster linguine

This sous vide lobster linguine is so decadent! To make it, start by removing two lobster tails from their shells. Then place them in a sous vide bag with butter and chives, and cook with your sous vide machine. Meanwhile, bring a pot of water to a boil and cook your linguine, adding the lobster shells for a bit of extra flavor. When the lobster meat is done cooking, chop it up and add it to a pan with the cooked linguine, cream sauce and more chives. Heat up the pasta and enjoy!

3. Sous vide poached pears

These sous vide poached pears make the perfect cozy autumn dessert. To make them, pour ice wine into a pot, and heat with some mulling spices and honey. Strain the mulled wine mixture, then place in a sous vide bag with peeled, sliced pears. Cook the pears with your sous vide machine for 30 minutes. Then garnish them with sumac powder, and serve them up with some cardamom-spiced mascarpone cheese.

4. Sous vide coffee butter

This sous vide coffee butter proves there’s no limit to what you can make with a sous vide machine. To make it, just place butter and whole coffee beans into a sous vide bag, and cook with your sous vide machine for three hours. Then strain the butter, pour it into a jar, and refrigerate. Use the finished coffee butter to add flavor to meats or breakfast pastries.

5. Sous vide beef dip sandwiches

This sous vide beef dip sandwich makes for a hearty, satisfying lunch. Simply place a chuck roast in a sous vide bag with some spices, and cook with your sous vide machine for 48 hours. Once the meat is cooked, pour the liquid from the sous vide bag into a pot and use it to create a light gravy. Then sear and slice the chuck roast, dip it in the gravy, and serve on toasted sandwich bread with caramelized onions.
